This recipe was sent to me in the mail by a young woman who interned at our farm. She just had received a beautiful vegan cookbook and wanted to share this recipe for spicy maple syrup. Callie used it to sweeten her toasted pistachios! I would think this recipe has a lot of potential. You could sweeten your tea or coffee, and I plan to try this on pancakes and waffles. I cannot imagine it not being delicious. Use your imagination with this recipe.
2 Cups Justamere's Maple Syrup
1 Cup Fresh squeezed Apple Juice
1 Tblsp Black Tea (loose leaf)
1/2 Cup Sliced Fresh Ginger
1 Tblsp Whole Black Peppercorns
2 Cinnamon Sticks
1 Tsp Whole Cloves
1/4 Tsp Whole Cardamon Seeds
1 Star Anise
Rind of 1 Orange
Place tea in a ball and in large pot on medium heat, combine all ingredients and bring to a boil. Once boiling, remove tea ball, reduce heat and simmer for 10 minutes. Remove from heat and let syrup sit overnight before straining.
